Now some of you may be saying “what’s mirepoix?” And others more savvy in the ways of cooking are saying “Big deal! I always make my own mirepoix.” But I’m writing this for anyone shelling out money for packages of frozen mirepoix veggies.
A friend of mine, an avid cook, told me she had been buying packages of frozen mirepoix mix to use for quick additions to recipes. She has some tendinitis, so saving herself all the chopping is a big plus.
DIY frozen mirepoix
I like the idea of having the mixture readily available because mirepoix mix adds wonderful flavor to all kinds of recipes. But the packages you buy in the store aren’t all that large. And after a while the extra money you’re spending for convenience adds up.
So I told my friend what i do to save both time and money. I chop up a whole bunch of carrots, celery, and onions ahead of time. And freeze each in their own (reusable) plastic zip lock bags.
This way I just grab some bags and voila! I have my own handy-dandy quick & easy frozen mirepoix mix. And since sometimes I just want chopped onions without the other ingredients, I make that bag extra full for non-mirepoix moments.
Is frozen mirepoix as good as fresh?
I don’t want to start a foodie war, so I’ll gladly concede that there may be a benefit to fresh veggies flavor-wise. And also some nutritional gain. But in my experience, the mirepoix ingredients you chop and freeze yourself for sure taste better than the ones you buy pre-packaged in the store.
And truthfully … don’t tell the foodies … it tastes just as good as fresh to me. Or close enough for the convenience. Plus nutrition levels stay pretty high, although decrease the longer they stay in the freezer. And as an alterative to those admittedly convenient but more costly frozen commercial products, a much better solution!
